Sprouted is a word used in the raw food community to denote the fact that seeds or grains have been soaked in water before being prepared. The sprouting process involves soaking the nuts for 24 hours, unlocking the true nutritional potential of the almonds by activating enzymes and removing indigestible "anti-nutrients".
Current research has found that consumers are snacking more than ever. In its recently released "2012 Snacking Consumer Trend Report," Technomic found two fifths (40%) of consumers acknowledge they're snacking more on healthier items than they did two years ago.
Although the definition of "healthy" is very subjective, Mintel respondents seem to have a good grasp on truly healthful foods. Fresh fruit is overwhelmingly (86 percent) considered healthy snacking, followed by raw vegetables (73 percent), and nuts/seeds (71 percent).
