Top-ranked Chef Recalls Germanic Roots in Bringing Oktoberfest to Life in Newport Beach
Bavarian Inspired Menu Available September 17 - October 29.
- (1888PressRelease) September 02, 2016 - In Bavarian countries, Oktoberfest is known as the Wiesn, a colloquial name for "fairgrounds" and has been an integral part of the culture since 1810. While music and dancing often take center stage, one Newport Beach restaurant will concentrate on bringing traditional foods to life. Austrian-born Paul Gstrein, executive chef of the critically acclaimed Bayside restaurant, will tap into his Bavarian roots to create an Oktoberfest menu available September 17 - October 29. Each dish will be crafted using ingredients commonly found in the European region. The restaurant also will celebrate by offering beers and wines from the region.
Among the menu's highlights:
- Herring Tartar ($15) -- Fresh marinated herring will be served with traditional sour cream, dill, celery, granny Smith apple and petit greens
- Schweinrtücken "Jaeger Art" ($29) - Boneless Pork Chop with forest mushroom sauce, Spaetzle dumplings & wilted spinach.
- Wiener Saftgulasch ($35) - Vienna-style braised beef short-ribs with potato puree, charred mini peppers and Brussel sprouts.
- Käserkrainer" Bratwurst ($26) - Emmenthal cheese-infused smoked pork sausage with sauerkraut, roasted potatoes and sweet & spicy mustard.
The official Oktoberfest is held in Munich each year. It is a 16-day festival that attracts some 6 million visitors each year. Its roots can be traced to the wedding of Crown Prince Ludwig, who later became king, to Princess Therese of Saxe-Hildburghausen on October 12, 1810. The citizens of Munich were invited to celebrate the royal event on the fields in front of the city gates.
