  • (1888PressRelease) May 22, 2009 - Novotel Clarke Quay’s Head Chef, Derrick Ang, has revamped the Square Restaurant’s a la carte menu to coincide with the World Gourmet Summit held over April and May.

    The Square restaurant is well-recognized as a dining establishment in its own right, and frequented by the general public as well as guests of the Singapore business hotel.

    Chef Derrick Ang has been with Novotel in Singapore now for 3 years, and head chef for the last 2. Mr. Ang has been heavily focused on The Square Restaurant’s concept, of live interactive cooking and focusing on creating a "menu filled with simple ingredients in amazing combinations".

    Mr. Ang's personal favorites, as well as some that have been best received by customers, include the smoked salmon roses on ciabatta with passionfruit dressing, the Redang Lamb Shank, and the roasted spring chicken with pumpkin stew, broccoli and olive coriander jus. Mr. Ang commented that “our focus has been to offer not only on local favorites such as Chicken Rice and Beef Kway Teow, but also to offer guests high quality western items infused with Asian influences”.

    The launch of the new menu coincided with the World Gourmet Summit held in Singapore over April and May. The Summit went for 14 days, with over half of the events being fully booked and the remaining ones extremely well attended. The Gourmet summit included events such as:

    • Gourmet showcases
