Thanks to the recent holidays of Rosh Hashanah and Yom Kippur. Also called 'Mandel Bread', these cookies resemble biscotti but are much more softer, sweeter and far more delectable. The recipe is a traditional one which has its origin in Russia and Poland - her ancestral home and she too has been making the same since she was a child. Although there are several recipes for preparing the Mandel Bread, the one used by Libby Gelfand, Laura's late cousin who lived in Los Angeles, California was found to be the best. So the recipe used in Laura and Libby's Boutique Bakery is the one popularized by late Libby.
Available in three exciting flavors, Chocolate Chip, Double Chocolate Double Nut and White Chocolate Cranberry Pistachio, these cookies are made with all natural ingredients like Bloomer chocolate, eggs, etc. The use of no preservatives and non-dairy products have elevated these cookies to the level of 'kosher' and 'pareve' by the Chicago Rabbanical Council which is obviously a feather in Laura's cap. Currently, Laura has rented a place in Skokie, Illinois where she prepares the cookies herself and she also supports philanthropic initiatives by giving away her products to various NGOs.
As Laura plans to spread a mouthful of happiness throughout the entire Hanukah season, she is being frequently spotted in various Holiday boutiques sponsored by synagogues along the North Shore. With the rising popularity of the Mandel bread cookies, they are now available at the Garden Fresh Market's Northbrook store as well. Laura was seen distributing free samples at the store's Kosher Korner between 11.30 am - 1.30 pm on Mondays and Fridays throughout the whole of October. She is also slated to come up with some innovative packages for the special season.
