Pepper Trails To Lure November Guests With Traditional Kerala Platter

To share an exclusive Kerala culinary experience with inbound tourists, Pepper Trails is launching tailor made demos and cookery sessions that will showcase Kerala's authentic flavors. Guests will be exposed to the unique twists on three exotic dishes, through the "Naadan Platter" (Traditional Platter).
In an idyllic and charming setting, guests will learn to conjure up a magical, mouthwatering Malabar style biriyani, inspired by the fiery red recipes from the Mughal kitchens of yore. Accompanied by raita, pappad, pickles and more, the Malabar Biriyani Trails is sure to send the travelers' taste buds into a royal frenzy. Prepared with any one non-vegetarian fare such as chicken, mutton, beef or fish, or fresh vegetarian produce, the Malabar Biriyani style of preparation is unique compared to others across India.
Influenced by the traditional cuisine of Syrian Christian households from Central Kerala, tapioca or 'kappa' is locally available and is a staple diet at any common man's home. From such humble origins; "Kappa" and the local variants of fish curry have gone a long way to become internationally sought after dishes. With ground coconut chutney paste and sour lime pickle, tourists will be lured to ease back into the alluring aroma of the Fish n' Tapioca Trails.
Authentic South Indian cuisine just cannot make do without the omnipresent Dosa. At the Dosa Trails, the guests will receive an opportunity to prepare and experience Dosa in many ways with a variety of ingredients such as rava (semolina), ghee, wheat, onion, tamarind and with fillings like egg, Chinese noodles, fresh sprouts, cheese, vegetables and so on. The cookery sessions will also feature how to prepare the regular accompaniments of sambar, mint -coriander chutney, onion-tomato chutney, and coconut chutney.
Taking into consideration the dietary habits and specifications of the inbound guests, Pepper Trails has taken care to modify recipes and lessen the spicy condiments and pungent flavors used. Pepper Trails offers culinary sessions to small groups (5 to 40) in an informal manner. Travelers not only taste the best dishes, but also learn how each ingredient came to be.
