Specialty Beer Is Sierra Nevada's First Foray Into "Wild" Brewing Yeast.

Created at Sierra Nevada's Chico, Calif., brewery, BRUX is an ale fermented with Belgian yeast and finished by a secondary bottle fermentation with the Brettanomyces bruxellensis yeast. This creates a dry and complex copper-colored beer with slightly tart notes of green grass, pear, spice and lemon.
