Hyatt Carmel Highlands offers hotel guests and area locals the ideal setting ...to unwind from the week and celebrate the longer sunshine-filled hours, with gorgeous Pacific sunsets paired with special pricing on an inviting new menu of handcrafted cocktails and sharable tapas dishes.

    There is only 1 Hello Sunshine left for 2012! From 5-7p.m. on October 18th, guests and locals alike may enjoy Hello Sunshine specials of half pricing on all handcrafted cocktails. The talented mixologists of Hyatt Carmel Highlands will also introduce a new handcrafted specialty cocktail each month to the lineup of drinks offered in Sunset Lounge, created specifically for the series. In addition, guests can feast on an enticing array of intriguing new small plates, with a complimentary appetizer offered with the purchase of any two. The celebrations continue with live music by popular local performers, Joe Indence and Lee Durley, entertaining guests beginning at 7p.m. until 10p.m.

    The Sunset Tapas menu offered at Hello Sunshine Thursdays was created by Executive Chef Matt Bolton and includes: Arancini with Canaroli Rice and Tartuffo Pecorino; a Charcuterie Platter with Duck Prosciutto, Parma Ham, Coppa and Bresaola served on a wood cutting board; House-Cured Olives with Citrus Zest, Lemon Thyme and Roasted Garlic; Bruschetta with Wild Mushrooms, Arugula, Parmigiano Reggiano and Balsamic Reduction; and Littleneck Clams with Chorizo, Lemongrass, Rice Wine and Grilled Ciabatta. Signature cocktail highlights of the new drink menu include: Cucumber Martini - Effen Cucumber Vodka, Dry Vermouth, Cucumber, Mint; the South of the Border - Patron Anejo, Tia Maria, and Triple Sec; and the Thyme Lemonade - Absolute Citron, Bacardi Limon, House Made Simple Syrup, Fresh Mint and Thyme.
