Christmas began his restaurant and hospitality career in 1985 initially as a server, to later manage casual and fine-dining establishments, such as The Hogs Breath Inn and Chicago Freddie's. Recognized for his exceptional customer service, creative management style and entrepreneurial spirit, Christmas opened three restaurants, two of which he owned.

Christmas will be responsible in all aspects of restaurant management and staff supervision at Rockin' Baja La Quinta, including staff training and development, event coordinating, business development (sales, marketing, promotions, etc), catering and budgeting, as well as community outreach/philanthropy/partnerships, such as Rockin' Baja's partnering with local schools and programs for at-risk students ("Rockin' Star Award"), collaborating with local police departments, and working with the Breast Cancer Awareness non-profits and Toys for Tots.
